Artisanal Bread Cloche
The bread cloche is an essential tool for artisanal bread baking at home. It mimics a professional bread oven by trapping steam under the lid for an amazing crust and huge oven spring. Results in beautiful and delicious crusty artisanal breads.
The Superstone La Cloche from Sassafras is one of the best on the market. Luke has been using his cloche at home since he started baking and it only gets better with age. Measures 13" wide at the base and 7" high, which is the perfect size for a 500 g round boule.
To use, pre-heat the cloche in oven at 500'F for 30 minutes while bread is in final stages of proofing. Carefully remove cloche from oven, remove lid, and turn bread over onto base of cloche. Score the bread with a knife or razor blade, place lid on cloche, and place in oven. Turn oven temp down to 450'F and allow 20 minutes for bread to bake with lid on. Remove lid and bake for another 15-20 minutes or until crust is dark brown. Remove from oven and allow bread to cool on a rack before slicing.

Care & Storage: unlike some other covered stoneware bakers, the cloche isn't designed to be soaked in water prior to baking. Please do NOT soak either the base or the cover of the cloche before baking; it may cause it to crack. Scrub to clean, using hot water if necessary. Do NOT use soap. Allow to completely cool before cleaning and storage.
